The Spotted Trotter Hatch Chili Salami with Mexican Oregano

This is a wonderful bounty of buttery heat that showcases the delicious herbaceousness of the Hatch chile carried through with the fat of the pork and organic garlic. Pair with washed rind cheese of all types as well as deeper, rich cow's milk cheeses. Pair with a Mexican lager or fruit forward IPA.
