A distinctive farmhouse sipping beer from Scratch Brewing Company in Ava, Illinois, built on a Tripel-style base and brewed with an impressive 55 pounds of local honey from Royal Bee in Steeleville, Illinois. Rather than making the beer overtly sweet, the honey enhances the aromatics of Scratch’s house culture, bringing notes of light stone fruit, honey, bubble gum and gentle farmhouse spice. At 7.9% ABV, it finishes surprisingly dry, warming and complex, with the honey character lingering delicately through the finish. A beautiful showcase of local Southern Illinois ingredients and Scratch’s wonderfully rustic approach to farmhouse brewing.
