The inaugural Hyperion is Redwood Empire's ambitious new annual limited-release series, blending mature stocks of bourbon, rye, wheat whiskey and single malt into one 110-proof whiskey. The components range from 7 to 14 years old, with Redwood Empire's own California-distilled whiskey joined by select stocks from Kentucky, Indiana and Tennessee. Expect a rich, layered profile of roasted apricot, walnut, pomegranate molasses and stone fruit, developing into cream, warm baking spice, toffee and toasted malt on the long finish. Only about 12,000 bottles were produced for this first release, and Batch 001's recipe will not be repeated
