Off Color Waddle Oktoberfest
Off Color Waddle ("Offtoberfest") is Off Color Brewing's take on a classic German Märzen/Oktoberfest lager, brewed with a focus on rich Munich malt and traditional lager techniques. Originally created for the wedding of one of the brewery's brewers, Waddle has become one of Chicago's most sought-after fall seasonals. It pours a deep amber with aromas of fresh-baked bread, toasted biscuit, and light caramel. The palate is layered with rich dark Munich malt, hints of honey and toffee, and finishes with a gentle, spicy German hop character that keeps the beer balanced rather than sweet. It's brewed using step-infusion mashing and extended lagering to maximize malt complexity and smoothness.
