El Buho's flagship mezcal is traditionally produced by the Jimenez family in Santiago Matatlán. Light smoke and roasted agave lead into flavors of caramel, red apple, vanilla and a touch of salt, followed by coffee and roasted agave on the finish. Approachable enough for cocktails but with plenty of traditional Oaxacan character to enjoy neat
