Lavaux Saint-Jacques represents one of the most prestigious premier crus of Gevrey-Chambertin, located on the hillside with an ideal south-east exposure. This exceptional terroir, composed of hard Bajocian limestone and limestone scree, gives the wine a remarkable crystalline minerality and depth. The 50-80 year old vines, cultivated according to traditional methods with naturally low yields, produce grapes of optimal concentration. Respectful vinification favours the pure expression of the terroir with fermentation and ageing in French oak barrels. The wine reveals an aristocratic elegance with notes of wild red fruits, violets, flints and noble spices.
