The sixth release in the Angel's Envy Collection takes mature Kentucky straight rye and splits it into two separate finishing programs—one portion spends up to 23 months in peach brandy casks, while another spends up to 12 months in toasted oak before the two are blended back together. The result layers the rye’s peppery spice with ripe peach, candied stone fruit, vanilla, caramel, clove and toasted oak. At 106.4 proof, it should retain plenty of rye structure while the unusually long peach-brandy finish adds a rich orchard-fruit character. This is Volume 6 of Angel’s Envy’s experimental Cellar Collection and a particularly unusual finishing combination.
