Soter is the bar against which I judge all other brut rosés made in the Willamette Valley. What's not to love about a set of aromas that includes peaches, brioche, white chocolate and wet slate? The wine's trademark energetic acidity helps to frame tangy flavors like quince and wild strawberries, along with a trace of saline. The 2021 blend of 80% Pinot Noir and 20% Chardonnay was disgorged in May 2025, after three-and-a-half years en tirage. If you enjoy smoked fish such as salmon or sturgeon, have a bottle of Soter Brut Rosé on call.
