Caterwaul is a collaborative project between winemaker Thomas Rivers Brown and Matt Hardin, a seventh-generation Napa Valley farmer. Their Sonoma County Cabernet Sauvignon showcases the rich and diverse terroir of the region. This wine is crafted from 100% Cabernet Sauvignon grapes, known for their robust structure and deep flavors. The winemaking process involves careful fermentation and aging in French oak barrels, which imparts subtle notes of vanilla and spice. The wine exhibits a complex flavor profile with layers of dark fruit such as blackberry and plum, complemented by hints of tobacco and chocolate. Its well-integrated tannins and balanced acidity make it an excellent pairing with grilled meats, hearty stews, and aged cheeses.
