Probitas was the first direct collaboration between distilleries on two different Caribbean islands, and it became a benchmark for blended white rum. The dark expression answers the obvious follow-up question with more of everything: a greater proportion of aged rum in the blend, a higher proof, and a higher-ester Hampden marque (LROK) than the one used in Probitas White. The blend combines a two-year-old pot still rum, an unaged pot still rum, and an unaged Coffey column still rum blended and bottled at Foursquare in Saint Philip, Barbados, with unaged pot still rum from Hampden Estate in Trelawny, Jamaica. In keeping with a centuries-old practice, it is colored with caramelized sugar produced in-house at Foursquare — added for color without adding sweetness.

About our Solera Barrels

Located within our Riverfront Distillery, our Solera Room enshrines 3 unique whiskey styles - all of which utilize our version of the time-honored solera blending process. Each year to commemorate our anniversary, our Founder Tim Piersant evaluates the whiskey within each barrel – trialing various blends to highlight the best of each recipe. After each year’s blend is complete, the distilling team refills each tank with newly mature barrels, where they will quietly marry until the following year.

Our limited edition Barrel Finishing Series celebrates the union of Tennessee High Malt into a variety of classic finishing casks. Crafted from a combination of unique whiskey mash bills - all containing at least 25% specialty malted grains - each batch is custom-made to complement the flavor and aroma characteristics of the finishing barrel.

For our seventh finish, our distillers turned to America’s Upper Midwest—this time selecting late harvest maple syrup casks from BLiS in Grand Rapids, Michigan. While less widely known, Michigan maple syrup is prized by enthusiasts for its small batch, kettle-cooked depth and complexity—especially in the final draws of the season. Exclusively filled with old growth, late harvest syrup, these finishing casks bring layered notes of maple candy, toasted grain, and soft oak, adding a warm richness to the whiskey’s profile.

To showcase the character of these finishing barrels, our distillers blended two complementary bourbon mash bills—one of which is a 4-grain, 3-malt recipe featuring two types of “aromatic” malt. Slow-toasted and caramelized at low temperatures, these specialty malted grains contribute aromatically-rich, maple-like flavors that naturally complement the sweetness and depth of the maple syrup casks.

STORY: There is a long-standing dialogue between France and the United States—one defined not by transaction, but by gesture. On July 4, 1884, France formally presented the Statue of Liberty as a symbol of shared ideals—craft, vision, and the enduring belief in progress. It was not simply a gift, but a statement of respect between two cultures shaping their own identities. CASE STUDY: 07 | FRENCH CONNECTION draws from that same spirit. Through the influence of Calvados, Martinique Rhum, and Caribbean Rum casks, it reflects a modern exchange—where French and island traditions leave their mark on American whiskey. Not an imitation, but a continuation of that quiet conversation—another gesture, thoughtfully given, and proofed to 107.4 as a quiet nod to the date it all began. TASTING NOTES: A seven-barrel blend of Kentucky Straight Bourbon and Rye Whiskies, finished across Calvados, Martinique Rhum, and Caribbean Rum casks. This release brings together two distinct traditions—French refinement and Caribbean depth—layered onto the structure of American whiskey. The result is a study in contrast and cohesion: orchard fruit and cane, elegance and warmth, restraint and richness. A reflection of France’s reach—both continental and Caribbean—woven into the fabric of American whiskey. NOSE: Expressive and layered. The nose opens with baked apple, pear compote, and delicate stone fruit—hallmarks of Calvados influence—woven with notes of toasted coconut, raw sugar, and vanilla cream. A subtle agricole freshness lingers beneath—green, slightly floral—adding lift to the darker, more indulgent aromas of molasses and caramelized banana. PALATE: Full and enveloping. Ripe orchard fruit and brûléed sugar lead, quickly deepening into rich Caribbean tones—dark molasses, spiced rum, and baked pineapple. Mid-palate, the rye introduces structure and contrast, cutting through the sweetness with notes of clove, cinnamon, and cracked pepper. The interplay between bright French precision and the depth of island rum creates a profile that is both composed and indulgent. FINISH: Long and resonant. Waves of brown sugar, dried tropical fruit, and soft oak give way to lingering baking spice and citrus peel. As it settles, a refined orchard note returns—light, elegant, and persistent—balancing the richness with a quiet sense of restraint.
