Modern Brewery’s Oops! All Waimea IPA is a hop-forward showcase built around one of New Zealand’s most intense modern varieties, leaning hard into Waimea’s high-oil, high–alpha acid profile to deliver both structure and saturation. Waimea—developed by New Zealand Plant & Food Research and typically ranging around 16–19% alpha acids—functions as a true dual-purpose hop, laying down a firm, clean bitterness while exploding aromatically with layered notes of tangerine, grapefruit, and tropical fruit wrapped in a resinous pine backbone.
Bright citrus (mandarin/tangelo), flashes of pineapple and passionfruit, and a distinctly West Coast–leaning piney snap that keeps the finish crisp rather than hazy-sweet. The result big, expressive aromatics with assertive bitterness.

At 5.6% ABV and 45 IBU Pale, Vienna, Aromatic, Caramel 120, and a touch of Chocolate malt for color create the bready and toast-like backbone for this brew. With heavy late boil and whirlpool additions of Galaxy followed by dry hop additions of Galaxy and Citra you will be thrown into a glowing world of citrus, pine and light tropical flavors and aromas. Pair this beer with Pork, Steak, Funky Cheese, or light fruity desserts. The bitterness will help to cut fats and sweetness while the hop profile will help to accentuate any fruits. Serve at 45º-50ºF in any glass that has a wide body and narrow mouth to help concentrate the hop aroma and flavors.
At 6.8% and 20 IBU, Pilsner, Pale, Munich 10, and Vienna malt take the wheel making this a very light and crackery base beer. The star of the show is the French Saison Yeast. This yeast adds all of the spicy, fruity, and sometimes pepper flavors. The highly active French Saison yeast eats almost all of the sugars making this a very dry and clean drinker despite the higher ABV. Pair this beer with Roast Chicken, Pork, Bleu Cheese or other funky flavored cheeses. The spice and fruit character will add to flavors and dry finish will help to cut fats. Serve at 45º-50ºF in a tulip or chalice style glass for best presentation.

To make a lager (from the German, meaning “to store”), we use a yeast that ferments the beer more slowly and at a lower temperature. It is then stored for several weeks, resulting in a beer that is exceptionally smooth. “Helles” translates from the German word for “light” (a quality reminiscent of European lagers), and our combination of malts, barley, and hops—specifically the German Noble Mittelfrüh hop—creates a bright, golden beer that imparts fresh grain characters and a spicy, lemony flavor.
Bluewood Brewing’s Crush NEIPA with Oranges is a hazy IPA built on a soft, high-protein malt bill with a smooth, full mouthfeel and low perceived bitterness. Typically around 8% ABV, it uses Citra and Amarillo hops for layered citrus character—orange peel, tangerine, and light tropical notes—enhanced through fermentation dry-hopping for added aromatic intensity. Real orange addition reinforces the hop profile rather than overpowering it, adding a subtle brightness and clean finish that keeps the beer balanced and drinkable.
