Harvested from 50-year-old vines outside the village of Villamañan, this Albarino is fermented in small oak barrels using natural yeasts before aging an additional four to five years under flor - with yeast. The name Rara Avis or “rare bird” describes its idiosyncratic winemaker just as well as the wine itself. His unusual treatment of Albarin – or Alberino – plays to his love of northern Spain, using traditional sherry making techniques to elevate this naturally crisp and fruity varietal with oxidative nutty notes and a dry, leesy finish.
