75% Cabernet Sauvingon and 25% Merlot
The Lulu is all about the fruit and the balance. On the nose, we have a combination of strawberry, peach and citrus. The well balanced acidity of the wine offers great freshness which makes it perfect to drink for brunch, as an aperitif or on its own.  This wine tastes great on its own or when paired with light main courses such as salads, tapas, vegetable tarts, cheeses and grilled meats & seafood.
Unlike for the red wines, to make the rosé, the grapes have to be harvested earlier to keep more acidity and aromatic expression. The grapes, typically used to make deep colored red wines, have to be pressed as soon as picked to separate the skins from the juice in order to produce a pale and crisp rosé. During the fermentation, the juice has to be maintained at low temperatures for the wine to express maximum freshness.

Le Merle "Robin"
A unique blend of Grenache, Cinsault, Mourbedre and Tibouren, a unique grape variety in Provence, the Cuvée Château Pas du Cerf Rosé is a true pearl of Provence, the alliance of subtlety and character. This wine of choice seduces with the femininity of its pale pink color as well as its aromatic complexity and minerality.
A pretty pale pink with salmon highlights, clean and shiny. A beautifully intense nose with aromas of spices, peach and citrus fruits such as lemon and grapefruit are discovered. The whole is accompanied by notes of anise and acacia. Great mouthfeel with finesse, perfectly coated by an airy freshness offering a fresh note on the finish - pure expression of the estate's terroir.
Goes perfectly with a Fish stuffed with capers, a grilled lobster sprinkled with some Provençal herbs or even a roasted shoulder of veal.

A cross between Cabernet Sauvignon and Grenache, Marselan is a varietal few people know about yet is emblematic of the local viticulture. It is used here to create a very nice rosé with a bright aromatic profile of fresh berries and is smooth & balanced on the palate making it the perfect summer companion!   This fruit-forward rosé can accompany an entire meal from pre-dinner drinks through to appetizers like tuna ceviche, main courses like stuffed peppers and with a strawberry tart to finish.  The grapes are harvested early September and quickly pressed. The juice is then separated from the skins as early as possible to achieve the perfect pale pink color. This wine is fermented at low temperatures to preserve its aromatic freshness.
