Põhjala Truffle Stout is an imperial stout brewed in Tallinn, Estonia, by one of Northern Europe’s most technically accomplished craft breweries. This beer integrates real black truffles into a dense malt base built from pale, chocolate, roasted barley, and crystal malts, supported by oats for body and a silky texture. It undergoes a long, cool fermentation with an English ale yeast strain to emphasize malt complexity over ester formation. The result is a deeply layered stout with notes of dark chocolate, espresso, umami-rich truffle, and a subtle earthy minerality. Minimal late hopping allows the specialty malts and truffle character to dominate, making this one of Põhjala’s most technically distinctive and gastronomic dark ales.
