Double-barrel-aged sour red lager with fruits, spices, and herbs.
This cocktail-inspired Flemish Red started as a soft, nuanced rotbier which we aged in 20 year Remy Martin French Oak Cognac barrels with mixed cultures before we then transferred the batch into Sazerac Rye barrels for further aging. The batch was then refermented in steel with black cherries, mission figs, orange peel, vanilla beans, and a blend of herbs and spices to emulate cocktail bitters.
