Infinite Entropy (DIPA) combines portions of Sand City's Brewery Infinite series with the scientific principle of Entropy, which deals with disorder, randomness, or uncertainty. In order to adapt the concept to the actual beer, we rolled a set of dice to randomize the dry hop schedule for this recipe.
We started off with a base of flaked oats and flaked wheat and a whirlpool of Mosaic and Galaxy. A roll of the dice dictated the dry hop schedule and ratios, so we used Mosaic, Galaxy, and Rakau. Infinite Entropy pours a hazy and deep yellow with aromas of mango, syrupy orange slices, and lime. Flavors start off creamy and lead into pops of papaya, mandarin orange, passionfruit, and complex berry, along with watermelon and lime fun dip candy and our EQ Juice finish.
