The freshly harvested cane is pressed and \u003cstrong\u003eslowly reduced into cane syrup\u003c\/strong\u003e, then spontaneously fermented using \u003cstrong\u003ewild ambient yeasts\u003c\/strong\u003e from the fields and distillery. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe fermented syrup is distilled in \u003cstrong\u003esmall pot stills originally crafted by Saoud’s father, who founded the distillery in 1932\u003c\/strong\u003e. Sonson is bottled at \u003cstrong\u003estill strength with no dilution or additives\u003c\/strong\u003e, giving it a wonderfully rustic, terroir-driven character.
