Maestro Mezcalero \u003cstrong\u003eJuan Manuel Pérez\u003c\/strong\u003e cooks the agave in an above-ground masonry oven, using dried agave leaves and \u003cstrong\u003equiotes (flowering stalks) as fuel\u003c\/strong\u003e—a regional technique born partly from the scarcity of wood in this arid landscape. The cooked agave is tahona crushed, naturally fermented with wild yeast in masonry vats, and twice distilled in copper pot stills.
