We started working with the idea of \"what makes sparkling wine great?\" Is it the bubbles? The yeast aging? Obviously, we make wines that are great for different reasons. This one accomplishes its goals differently. \n\nAs with prior releases, the base wines were barrel-aged for depth and texture before bottling. Prior to bottling, we assembled a rich but energetic blend of Chardonnay, Pinot noir, Albarino, Pinot grigio, and more. Due to long aging in barrel, the wine had plenty of alcohol (increases while in barrel) and lees contact (richness).
